Seriously.  She didn't make "Chicken Tonight".  She made chicken.  This evening.  It was all herby and skin-free and boneless and buttery and oh GOOOOD it was orgasmic.  With a super yummy rice dish I forget the name of.  Something European.

Report from Mum: Actually, it was sunflower oil, ketyap manis, a squeeze of garlic, a squeeze of ginger, pepper and salt, chives, parsley and a pinch of taragon, mixed all up, roll the chicken up in it, left it in it to marinate, then put it into the oven till it's cooked and tender. Open tinfoil, let sit. Served with savoury Rice Pilaf. Juice off the chicken went into the rice.

So it was dairy free too.

And people wonder why I don't leave home.

I love a good piece of chicken, whether it's buttery/herby type or on the fancier side. Monday night, Debbie made this absolutely faboo skinless stuffed chicken breast - and it's low calorie, but SO GOOD.

You roast a head of garlic for an hour @ 350F so that it gets all buttery and nutty tasting. Then, you separate the roasted garlic from the skins and mix it in with softened herbed goat cheese (3 oz), stuffing about 4 tablespoons or so of the mixture into a pocket that you've placed in the chicken. You lightly season the chicken with a wee bit of kosher salt (the entire recipe calls for 1/2 tsp. of salt) and pepper.

You take 2 teaspoons of olive oil and place it in a frying pan, lightly browning both sides of the chicken. You then bake the chicken in the oven @ 350F (I think that's about 170C) for 20 minutes. Let it stand for 5 minutes and voila! Damned tasty chicken that's good for you! Plus, a lactose intolerant person can enjoy it :-)

It was food of the Gods. I swear, I've been to restaurants and my Mum's cooking beats the pants off of them.
