A real chili recipe.
Sep. 20th, 2008 11:00 amAnyone know a real proper chili recipe? Like I had in LA? Cause I miss that shit, yo. I figure maybe if I knew the recipes, I could have proper Mexican food again. They just don't make it right here in Australia. :(

When I make Chili I throw together about 2lb's ground meet. Turkey, beef, sausage, or Italian sausage, ground pork is nice too, and then theirs ground buffalo if you can get ahold of it. I imagine ground Emu might be good too. You can mix and match depending on your tastes. Using the Italian Sausage can get some extra spice in there depending on your tolerance. Brown the meat, but don't cook it fully (and of course pour off the grease). I use two cans of kidney beans, but black beans or pinto beans work well. A cup of stock (again the type of stock you want will depend on your particular taste). Chopped onion, garlic, and tomato. Then I throw in two chopped serrano's and two jalapeno's, but thats personal choice, you'll want to add heat as you can or can't take.
Oregano, thyme, basil and chili powder are the basics for your seasonings. You can add more or less to taste, or different flavors as you want. Add a bit of salt to taste (If you can taste the salt you've added too much) and remember that packaged chili seasonings will likely already have salt added.
I throw it all together in a slow cooker in the morning and have a wonderful smelling house when I get home from work. But really it can be brought to a boil and cooked together quickly if you cook the ingredients more beforehand.
